Overview
Problem :

In Paris, Mexican food - a rapidly growing trend over the last decade - has largely been reduced to taquerias or Tex-Mex: tacos or burritos served with cheese or mild salsas, frozen margaritas made with supermarket-grade tequila, and a cliché "fiesta" décor. While other restaurants do exist, they often lack atmosphere or simply flavor. Furthermore, Oaxaca - Mexico’s gastronomic capital - remains entirely unrepresented in Paris, the gastronomic capital of the world.

Craft beer has also seen strong growth over the past ten years and has firmly established itself as a trend; today, you can find an IPA in almost any café or restaurant. However, for those wishing to delve deeper and truly explore this world, specialized bars and pubs tend to cater to a male demographic, featuring rugged décor, beer lists devoid of explanations regarding flavor notes or aromas, and a food offering that is either an afterthought or non-existent.

Paris is missing a venue that brings these two worlds together without compromising on atmosphere. It needs a place where Mexican cuisine is taken seriously, where craft beer can be enjoyed in all its varieties, and where the décor and ambiance are just as important as the food and the beer.

Solution :

Nezbittar is the only Mexican brewpub in Paris: located in the 11th arrondissement, it is designed to bring two worlds together without compromising either. We'll brew our own craft beer on-site, explain it simply and without jargon, and pair it with Mexican cuisine inspired by the flavors of Oaxaca: bold, generous dishes far removed from Tex-Mex clichés. Our menu is predominantly vegetarian and features delicious Mexican tapas designed for sharing among friends (we recommend 2–3 plates per person). On weekends, we'll offer a brunch menu featuring classic Mexican breakfast dishes. As for beer, we'll serve eight varieties, including four that rotate seasonally, ranging from lagers and IPAs to stouts and wheat beers.

The space will be designed for everyone: groups of girlfriends or guys, beer aficionados who know the difference between an IPA and a blonde ale, and newcomers just discovering craft beer. We'll also offer Mexican cocktails and a selection of natural or organic wines for those who prefer to start their experience differently. The décor will strike a balance between a space where you want to linger and one you’ll want to share on Instagram - a spot where you might come for one drink but end up staying for a whole meal.

Nezbittar is a microbrewery and restaurant with a seating capacity of around 90 (including a lovely terrace); it is open every evening, seven days a week, as well as for brunch and dinner on weekends. The average receipt will be €28, with a first-year turnover of 1.4M€ and an EBITDA of approximately 27%. The project’s ambition goes beyond opening a single brewpub; the goal is to create a group of brewpubs - each with a distinct culinary style and identity inspired by our roots. The second brewpub (Nezbittar Pizza Tavern) is slated to launch in Year 3, followed by the third (Nezbittar BBQ Garden) in Year 5.
